Bacon Wrapped Pesto Chicken

It’s not Sunday, but we’ve been trying so many new recipes lately that I thought I’d share the one we made last night: Bacon Wrapped Pesto Chicken.
The original recipe at AllRecipes.com calls for prosciutto instead of bacon, but based on the user submitted comments I read, bacon was a popular substitution and easier for me to get my hands on this week. The result was a pretty delicious chicken dish!

What’s Cookin’ in the New Year

Happy New Year!
January is shaping up to be a busy month and 2011 has kicked off to a great start so far. Our doctor appointments have been going well, the geekling’s heartbeat has been nice and strong every time we get to hear it. The doctor is pleased with everything about our progress so far! We have another check-up next week, but the most exciting appointment is coming up next month, when we find out whether we’re having a boy or girl. I’m still confident it’s a girl, and I think even Lucas believes we’re having a girl. Time will tell! Who knows, the geekling may surprise us… we’ll let you know!

Kara’s Butternut Squash Pasta

It’s been a busy week but I’m finally finding the time to update and share the most recent new recipe that we tried last Sunday – Butternut Squash Pasta! The recipe was created by my teacher friend, Kara, and it turned out so good that she just had to share it with us. And we’re so glad that she did!
